Grot’s Chunky Choc Nutty Slice
INGREDIENTS: (makes approximately 12 squares)
2 cups plain flour
2 cups rolled oats
1 cup brown sugar
½ tsp baking powder
½ salt
1 tsp cinnamon
½ tsp nutmeg powder
1 cup vegan butter
1 tin coconut condensed milk 320g
½ cup shredded or dessicated coconut
½ cup chopped hazelnuts
1 cup chopped walnuts
1 block dark chocolate 100g
METHOD:
In a large bowl, mix together the oats, flour, sugar, cinnamon, salt and baking powder.
Add the vegan butter and rub it into the flour until the mixture resembles breadcrumbs.
Turn the oven at 180 degree C.
Oil a 20cm square baking tin and line it with baking paper.
Spread the mixture evenly into the pan and firmly pack it down.
Bake for 15-20 minutes until it turns a light golden brown colour.
Remove from the oven and allow it to cool.
Once the mixture has cooled, break the biscuit slice into pieces and place it into a food processor and blend.
Heat a small pan of water and place a bowl in it.
Roughly chop the dark chocolate and place it into the bowl. Stir occasionally until the chocolate melts. Turn the heat off and leave the melted chocolate on the stove.
In a large mixing bowl, place the crushed biscuit mixture, hazelnuts, walnuts, shredded coconut and a tin of coconut condensed milk. Mix together well.
Carefully pour and mix in the melted dark chocolate, leaving some melted chocolate to drizzle on top later.
Line the square pan with baking paper and place the chocolate biscuit mixture in, spreading it evenly until it is firmly packed down.
Drizzle the remaining melted chocolate on top and place it in the fridge for 2 hours. Optional: You can also sprinkle chopped walnuts on top.
Remove from the fridge and slice into squares. Lovely with a nice cup of tea or coffee! Store any leftovers in the fridge.
